Earthworms from peas
Item: boiled in lye, remove their skins and boil them until they are done. Pass them through a sieve into a bowl (to look) like earthworms. Then take made mustard and honey and season it with saffron and spices, and pour that over the peas.
Not much needs saying about this dish. It is a bit on the stodgy side, but honey mustard is a good combination for pease pudding, especially in winter. Try it!
The Inntalkochbuch is from a monastic library in Bavaria’s Inntal region (the Inn is a tributary of the Danube), dating to the late 15th/early 16th century. It is written in Upper German and strongly reflects local culinary traditions, though some of its recipes are commonplaces found elsewhere.
